Such great recipes. I made vegan “paella” from a book called The Voluptuous Vegan. Brown saffron and tomato rice with roasted cauliflower, roasted chick peas, spicy marinated and roasted tempeh, lots of veggies and olives. My husband is a beer a nachos kinda guy but even he thought this was a winner.
