Thankfully, Lisa Paris, the raw, vegan how-to gal behind Rawbeets.com, has an alternative—a frighteningly easy recipe that will satisfy many a sweet tooth—from tiny fairies and cowboys to adult witches and zombies.
“Watch out!” says Paris. “They’re devilishly good.”
Devilishly Raw Donut Holes
Recipe by: Lisa Paris of RawBeets.com
Yields about 20 little devils, depending on size.
Ingredients
1 pound Medjool dates, pitted
2 ¼ cups dried or shredded coconut
sea Salt
Instructions
Pit the dates and reserve a ¼ cup of the coconut in a small bowl (this will be used for rolling later).
Combine pitted dates, the rest of the coconut (2 cups), and a couple dashes sea salt in a food processor, fitted with the “s” blade. Pulse for 30 seconds to a minute or until a dough like consistency has formed.
Roll the dough into one-inch balls, coating them in the reserved coconut.
That’s all there is to it! Note: These little guys keep best when refrigerated.
