Recipe: The Mint Mojito Smoothie

mojito mint smoothie This minty end-of-summer Mojito Smoothie may sound like a healthy substitute for the happy hour cocktail.  (Heck, it could be.)

But we’re going to sip this smoothie before we head to the office all month long. It’s such a powerful pick-me-up, you might not need a cup of coffee at your desk while you scan your morning inbox.

How does it work? It’s a cleansing dose of green fruit and veggies that reveal the energy, vitality, and clarity you naturally have—but that a sluggish digestion and stress on your mind can really slow down.

Fresh mint stimulates digestion and is said to help dissolve fats, and the water content in cucumbers helps flush out anything that makes us sluggish. Lime adds antioxidant vitamin C and boost alkalinity, and the rind also contains a medicinal oil used for digestive issues.

And while the regular mojito (and all alcoholic drinks) leaches folate (vitamin B) from our bodies, avocados can help replenish it.

Finish it off with a sprinkle of low-glycemic coconut sugar for a hint of sweetness.  —Jennifer Kass

Blend and enjoy!

1/2 lime, including the rind
10 mint leaves
1 c coconut water
1/2 cucumber
1/4 avocado
1 tsp coconut sugar
Optional: Protein powder
